This term is part of a table regarding different oils (olive oil, seed oil, etc). The table is part of a larger document which outlines the procedure for procurement of the various types of oils from different suppliers. So the larger document starts with some general instructions explaining the purpose of the document and then this table is a big part of the document and acts as guidelines.
The table starts with Oggetto, then Scopo, Campionatura, Esame and under Esame there is the sub heading "Che cosa".
Then the following appears where the numbers indicate the various types of oil.
6): Acidità, Comp. Acidica, umidità/ impurezze, fosfolipidi (girasole), numero di Iodio (palmoleine)
(4): (6)+Salari, perossidi, limpidezza
- umidità/impurezze, fosfolipidi (girasole)
(3): (4)+spettro, steroli, Eritrodiolo / uvaolo, ECN42 - Salari
(2): (3) +cere, lipasi, Salari
(4), (3) and (2) are "semi raffinati", "sansa raffinato" and "oliva raffinato". I am unsure of the meaning of "Salari" here. Can anyone help?

Salari is a surname, and that is why it always capitalized in your text.
'Giuseppe Salari (...) nato a Spello nel 1909. Senatore dal 1953 al 1972, ricoprì anche l’incarico di sottosegretario all’agricoltura, al lavoro e alle finanze e fu anche Parlamentare europeo. È il padre della due leggi del 1960 e 1968 che per la prima volta hanno regolamentato la produzione, il commercio e la pubblicità dell’olio di oliva e dell’olio di semi. Solo a seguito del suo lavoro e dopo un’aspra battaglia in Parlamento – l’ultima normativa fu promulgata quando era presidente dell’Accademia nazionale dell’Olivo – nasce la dicitura “olio extravergine d’oliva”. While confirming that Salari here refers to the person who first issued a law on extra-virgin olive oil, I am not sure it is a 'method' your text refers to. If it is, I think it is a 'local' method, applying sets of rules that refer to the quality characteristics of the different types of oils. But, again, this would need more research.

The academy was first chaired by G. Salari, and its aims focus on scientific research for oil production improvement.

| Yes, they are tests that need to conducted on the oil products so I imagine Salari probably refers to a test that ensures that the oil complies with the Salari rules. |

Per gli oli di semi si usava e si usa ancora il “Lovibond”, che è uno strumento che con la tecnica del confronto con standard può catalogare gli oli per le loro nuances (In Italia abbiamo la legge “Salari” che impone che gli oli di semi debbano essere raffinati e stare dentro limiti ben precisi di assorbimento a 420nm :0,10 e 453nm:0,20)
