I know the book title "La carta esférica" is translated as "The Nautical Chart".
However, when I look up "esférico" in the ES-EN dictionaries,
I can only find few literal translations, among which "spherical" is most prominent, not to speak of any detailed explanations for this interesting term.
According to most dictionaries, something "spherical" is "round like a ball", and furthermore "dealing with a sphere or its properties" (OR "dealing with constellations"?) to my understanding, based on which and the fact that a "star chart" is a round map presenting sky, I think I'm more inclined to believe "carta esférica" is a "star chart" instead of a "nautical start".
Could anybody provide some insights?

Your logic is reasonable but faulty. When words are combined in meaning, such as in this case, you cannot really look at them individually. Moreover, this nautiical chart is based on a sphere - the world. Therefore, it is round and much more immediate to man's knowledge at the time the term came into existence, although I do not know its specific etymology.
Idiomatic expressions are like that. When we say in English, that costs an arm and a leg, I wouldn't doubt that this is because farming use to be the mainstay and without an arm or a leg, or both, one was doomed.
