Липиды дефосфорилированием других молекул не занимаются. Это функция фосфатаз. В Вашем тексте явная ошибка, хоть ее и Гугл многократно повторяет. Фермент называется фосфатаза липидов (или липидная фосфатаза, что хуже). Миотубулярины - это семейство таких ферментов.
Кстати, вдруг пригодится: в Гугле есть еще одна ошибка. MTM-related переводят как миотубулярин-связанный. Правильно - не связанный, а родственный.
