In a first step, image analyses were conducted to choose the more reliable parameters from 2D and 3D image analyses to describe the microstructure of breads. These calculations are summarized in Table 2. The porosity increases from the crust towards the core of the samples. This parameter is well estimated by both methods based on 2D or 3D images analyses. Matrix thickness is underestimated by the 2D method. With 3D image analysis, the matrix thickness is calculated as the mean of local thickness of the walls of pores obtained by a ***sphere fitting*** algorithm which is implemented in CTAn software.

Sorry. The sphere fitting is not exactly least squares. The data points are calculated in a least squared sense. Suppose if Sphere Fitting = Spherical Regression, can we say 球状回帰?
