Ich nehme mal an, dass es hier z.B. um Schokostückchen, Rosinen oder sonstwas geht und "appareil" ist so ein Wort.... schließlich heißt "Gebiss" auch "appareil dentaire"... ;-)

Mélange de différents ingrédients rentrant dans la composition d'une recette salée ou sucrée (soufflé, biscuit).
Beispiel:
Pikanter Teig (für 20 bis 30 Beignets):
Vermischen
150 g Mehl
4 Prisen Salz
2 Prisen Pfeffer
1 EL Olivenöl
2 Eigelb (das Eiweiß aufbewahren)
15 cl Milch
2 Stunden ruhen lassen; diese Mischung nennt man «l’appareil» (das Werk)
Das Eiweiß zu Schnee schlagen
Vorsichtig mit der fertigen Mischung unter Verwendung eines Holzlöffels vermischen
