The translation must be precise because there is another kind of production called 'batch/batch mode production'. Hence:

(A)if your text refers to simply producing goods in large quantities, i.e the market point-of-view, then 'mass production' (e.g. nowadays clothes are mass-produced, rather than custom-made).
(B) if your text refers to 'production' theory, i.e. general factory terms or point-of-view, then 'serial production', which means that goods are produced 'continuously', unlike 'batch /batch mode production', where first x units of Good A are produced, then the line is reset for x units of Good B. (e.g. a factory making one kind of car produces 'serially', i.e. day and night)

I don't recall ever hearing or seeing "serial production". "Assembly-line production" is more common.

There are two modes of production in Manufacturing: batch and flow. The batch mode involves lot-sizing mostly discrete quantities in assembly lines. The flow mode is mostly continues and is the kind of production seen with pharmaceuticals, chemicals, dairy products, etc. With this expression "producción en serie", you are not indicating the context. I'd suggest to use 'batch production' for the assembly lines and 'continuous flow production for the flow mode. The word serial, which might be translated "en serie" is used to add that there is a mass production of an item that is taking place within the framework of certain specifications. As a consultant on ERP systems, this is what I have been using. A qualified souce on this is the APICS Dictionary on Production & Inventory Control.
