lots of instances on the web of El Palmar being called a sugar company, but I believe mill is more precise.
Interestingly, I'm doing a ton of stuff on sugar mills, but in Mexico they're called ingenios....

The thing is, I need to find some way to distinguish between the earlier "ingenio" of the 19th century and the "central" of the 20th century. And they're both "sugar cane mills" as far as I can tell! |

Ingenio is the property with a sugar cane plantation and the machinery/facilities to process raw sugar.
