MARKET DISCOVERIES
What's fresh at area farmers markets, and how to make the most of the bounty:
Ficoide Glacial (glacier lettuce)
What I found: You never know what kind of edible treasure will turn up next at Viridian Farms' booth at Portland Farmers Market (downtown on Wednesday and Saturday). Last week it was glacier lettuce, a French succulent of South African origin with velvety leaves, crunchy stems and a citrusy bite. Slightly salty, it's a favorite of top Spanish chefs, who like to serve it with seafood. Viridian's Manuel Ricio and Leslie Lukas discovered it last fall in Avignon, heard more buzz about it in Spain and now grow it on their farm near Dayton. At $4 a box, it's not cheap, but a fair price to taste an exotic European favorite ahead of the crowd.
