Here is the context:

Los que lo conocen bien, recomiendan el pulpo de roca y cítricos, la fideuà roja, el lomo de atún de sorra, tomaca y oliva negra, el salmonete con all i pebre y arroz de coliflor o la coca de pera, té ahumado y lima.

Is this a special kind of tuna? I haven't been able to find it in any of the usual places.

Please note that my suggestion is for the term in context: lomo de atún de sorra. I thought that would have been obvious, but it seems it needs pointing out. :O)

Following the references I posted below, and understanding sorra to be a synonym of ventresa.

You'll find references to "tollina de sorra" or "tonyina de sorra"; this refers to the same part of tuna, but salted. I don't see evidence in your text of it being the salted variety though. :O)

The "atun de sorra" also known as "tonyna de ijada" can be translated in English as "salt cured tuna".
I am sorry I have no time to post links, but I think it's going to be easy to find them.

DRAE:

"Sorra" en catalan significa arena, y "tonyina "atun" el "atun de sorra" o "tonyina de Sorra" es como se conoce en Valencia y Catalunya respectivamente a la ventresca de atun.
